Ingredients
  • 2 cups all-purpose flour
  • 1 cup yellow corn meal
  • 1/2 cup soy flour
  • 1/3 cup powder milk (ground very fine)
  • 2 tablespoons corn starch
  • 1 teaspoons baking soda
  • 1 tablespoon poultry seasoning
  • 2 tablespoon sea salt (ground very fine)
  • 2 teaspoons Nu-Salt (Potassium Chloride…KCl)
  • 2 teaspoons paprika
  • 2 teaspoons dry mustard
  • 2 teaspoons garlic salt
  • 1 1/2 teaspoons black pepper
  • 1/2 teaspoon cayenne pepper

Directions
  1. Mix all the ingredients in a 1-gallon zip lock bag by inverting the bag for about a minute.
  2. Dip chicken in egg or egg substitute then, coat with chicken breader by shaking together In plastic bag or rolling pieces in breader on plate. Deep fry or pan-fry at 325 to 350 until golden brown.

Oh you tease you....so when is the fishing trip breading recipe hitting GR?! In the meantime, I've got to give this one a try! And, I think I'd do the Old Bay for the chicken, too....you won't be mad at me if I do will you? LOL!

Looks like a lovely mix of spices. Haven't had fried chicken in a long time. I may make some chicken tenders with this.


Only change I'll make is...can I kick the cayenne up by half a tsp? Please? :) Sounds wonderful. Good of you to release it to the masses! :)

OKay, going to add another comment, here, now that I've made this...it was excellent. :) I followed the recipe EXCEPT no soy flour(don't buy it), and I...ummm...tripled..okay okay...quadrupled...the cayenne... I just couldn't help it! :) But, it only just barely had a lil hint of heat(for us, anyway), and the most important aspects of the recipe weren't altered with that change...the crispiness, the lovely brown it cooks to, and the various flavors in the mix...great stuff. We used it on tenders, and will do so, again...as well as trying this on seafood, as mentioned, below. Thanks for the opportunity to try something just a lil different than our "usual", darlin'! :) (added a pic :)

Alterations


If you replace the poultry seasoning with OLD BAY® Seasoning this makes a great crispy seafood breader.


Oh yes, Old Bay can be used on chicken too.
