    I didn't make chuckieb's recipe for the guacamole (just did a really quick version with mashed avocado, lime juice and a bit of chipotle mayo for creaminess & zip), but the Refried Bean Patties were so good. Loved the fact that using refried beans eliminates the step of mashing the beans ;)

    Very flavorful and easy to mix; I did do *almost* one-hour refrigeration but really didn't want to wait. ;) I used Panko breadcrumbs and went with the lower amount of 1/2 cup (I guess my can of beans wasn't as "mooshie" as chuckieb's (her word, not mine!) :O

    I thought about making pico de gallo. But I had the avocado to use so that directed my thinking. I'm going to have a leftover patty for lunch today. Won't have time to make pico but will try salsa for a flavor change... My favorite... Newman's Own Peach Salsa

    A dollop of sour cream sounds good, too.

    GK, I do not dislike or avoid avocados, I just wouldnt buy one to use for something, so I rarely have them. I also rarely buy sour cream. I often use mayo as a sub. Dont ask me where I came up with that. But it really works.......if you like mayo, which I fo.

    The rule of thumb I go by is that salsa is cooked (as in what you buy in jars from the store) and that pico de gallo is fresh - you know like the stuff on my black bean recipe that produced THE famous pic? :P You can cook salsa at home and buy pico de gallo at the store too, but most often I MAKE pico de gallo and BUY salsa. (Although I HAVE made salsa at home, Sweet And Hot Or Not Cooked Tomato Salsa but I've NEVER bought pico de gallo.)

    And...like you, I think mayo is just about good on anything.

    Post-lunch update: The cold patty with salsa was delicious. When warm, the patties are very soft and tender, but when cold they are firm enough that I believe they would make a good veggie burger on a bun. And how about that Rooster sauce as a condiment? ;)

    Okay Frankie your killing me slowly, no avocado's either!!! J/k ;) My take on salsa versus pico is different than GK's.... To me they both pretty much have the same ingredient's just pico is the ingredients chopped and left chopped and even able to throw a chopped mango in there if needed. Salsa is all those ingredient (minus the mango for me) blended up. Just IMO.

    I always think of salsa as being "soupier." More liquid to it and the ingredients always a bit mushier. I think pico de gallo as finely chopped up ingredients, crispier and no liquid to it.
    I think a hot bean patty would be great on a bun with some cheese and onion, too!

For sure, there aren't too many truly authentic Mexican restaurants around here! :) I did some quick googling and have found sites that seem to indicate very different things. I guess if your taste buds like it, that's what's important... :D

I did follow the recipe for the gaucamole BUT it is the exact same way I make it all the time anyway ;) I used refried black beans and I either I need new non stick pans (i'm thinking thats what it is cause the surface is looking pretty iffy) or I didn't add enough bread crumbs ( I just guesstamated). Anyway, mine stuck a little, not to bad, but the finished product is delicious!! Thanks chuckie!!
