Roasted Beet and Walnut Dressing Salad

    I made Tina's/Notyourmomma's
    Roasted Beet And Walnut Dressing Salad
    last night.
    It was fantastic! The recipe serves 6 so I halved it as we were only two. And even so, it made a lot! I used two large beets, which I should have roasted for just another maybe 10-20 min. as when I cut them up later they were still just a tad hard in the middle. Still tasted great but they could have been just a bit softer.
    I had never made a dressing like that before and I had thought I had walnuts in the pantry but it turned out I only had pecans so I subbed those. Walnuts probably would be even better since Pecans are sweeter. I was pleased however that I did have the Walnut oil and the smoked paprika but I didn't have the ancho chile pepper.
    The dressing was sublime. I could have eaten just the dressing with a spoon. And at the end of the instructions when it said "Dress beets with scant amount of dressing and serve extra dressing on the side" I thought....To heck with that....I'm putting it all on! :)
    Tina...this was a really, really top notch salad and both hubby and I give it five forks. This will go into our regular rotation. Kudos!

    Janet, thank you for the glowing review. I could eat a whole bowl myself. I live with heathens that don't appreciate the flavor of beets. I never get to make this salad unless it is for company and I"m assured that someone will be sharing this with me. I love the flavor of walnut oil, but it is an expensive ingredient, but so good. Ancho chile pepper is not necessary as you have discovered...I just give that pinch of heat for my own taste.

    I came across some beets at the farmers market for SUPER cheap. Instantly thought of this recipe. It was SO GOOD! Chuckie was right about that dressing...it's fantastic! I did not have the walnut oil so I stuck with the olive oil. I didn't blend the dressing up, I just made sure to chop it all small. Yum! This is the perfect recipe to try out beets if you aren't sure you like them or not, it's just so good! Thanks NYM!!!
