Another roasted beet preparation that graces the table each spring. Delicious with grilled lamb chops lamb, good companion to other grilled meats, too. Round out the meal with a saffron couscous and you are set for a colorful yummy dinner.

Good grief, I forgot to tell you this is equally delicious prepared with a roasted head of cauliflower. I will bake a whole head of cauliflower and top with the dressing for company presentation. Otherwise, I can roast the cauliflower in pieces quickly and toss with the dressing and serve warm.

Yummy. For most of my life I didn't like beets until a friend roasted some for me and put a nice viniagrette over them, now I am hooked and can't get anough of them. This recipe is divine. I will be making this weekend. Thanks for sharing.

Wow, hon - how did I miss this wonderful recipe? I love your faboo dressing on the roasted beets, but I can totally see it lifting a number of veggies to the heavens. I have walnut oil and will kick it in with the olive oil as suggested. Thanks so much for sharing! ;)
