So glad chuckie brought this to my attention in the IMI! This is by far the best beets recipe I have ever had! The flavor of the dressing is a perfect pairing for the roasted beets! Wish I had had the walnut oil, bet it was delicious! More in the IMI Roasted Beet And Walnut Dressing Salad

Had this for dinner last night Tina and we LOVED it! I'd never made a dressing like that before and I could have just eaten the dressing all by itself with a spoon too! :) A very original recipe and one I've not ever seen before. Loved it and will keep on regular rotation. Thanks so much. Full review on IMI!

Wow, hon - how did I miss this wonderful recipe? I love your faboo dressing on the roasted beets, but I can totally see it lifting a number of veggies to the heavens. I have walnut oil and will kick it in with the olive oil as suggested. Thanks so much for sharing! ;)
