Roasted Red Pepper Provolone Panini

  I love simple sandwiches like this! I roasted my own red pepper and used a country white bread. When I looked at the provolone I chose I noticed it read "aged provolone". I don't like certain stinky cheeses and when I smelled it, it was kinda funky. I tasted a bite though and it wasn't too bad. As you can tell I did this in my waffle maker :) My red pepper was VERY juicy and I knew I should have taken the extra step to pat them dry with a paper towel, but I didn't. Half the bottom bread was a little soggy, not bad though. The cheese was fine too, mellowed out when melted. This waffle maker experimenting is fun!! :)
