Rocca Cookies by Dianartimus

    With the February blahs upon us here in Ontario I felt like sweetening up the day so tried my hand at
    Rocca Cookies
    this morning.
    I don't know if Graham Crackers come in different sized boxes or not, but my box had two sleeves worth and 24 crackers (which was almost a sleeve full) filled my cookie sheet so I didn't do the whole box. I wasn't sure what Baker's sugar was so I just used icing sugar. I used a tablespoon to press the almonds into the sugar coated crackers but they'd stuck pretty well anyway. 12 min. appeared to be a perfect baking time. Careful when you're pulling the cookie sheet out of the oven at that point because they slide if you're not careful! I liked the instructions on melting the chocolate chips in the microwave and it worked really well. I didn't have any luck drizzling the melted chocolate with a teaspoon so I used a fork. Dianartimus seems to be better at that than I! :) You cut the cookies while they're still warm and I think this is important as if you let the mixture sit to cool before taking them off of the parchment paper it might be tricky. I ended up putting mine back on the cookie sheet and cooling them off in the fridge until the chocolate set. They are delicious. Makes 48 triangular cookies. Quick, easy.....I'd make again for sure. Would be a lovely Christmas treat! Thanks Dianartimus!
