Serencymru 's Chipotle Macaroni And Cheese

    Ive been on a chipotle kick lately so I made this. I also had about a pound of ground beef that I wanted to use up, so I doubled the recipe and added it. I forgot to add parsley which would have added some color. Mac & Cheese is always so plain looking. With chipotle in this and the Sazon Goya, this was really good. I added 3/4 of the can of chipotle I didnt think it was too "spicey". Had a mild bite to me, but a great smokey flavor. Oh, and I was out of bread crumbs so I had to skip thos. This was an easy dish with tons of flavor

    I think next time I will make it with some bacon,

    You actually did a bang up job of the macaroni picture MrP. Although I must say I'm surprised by your choice of beer this evening. :) I have only made homemade mac' n cheese once. The main reason is most recipes seem to call for a lot of cheese and sometimes cream, etc. and we just avoid it. But this one only has 8 oz. of cheese and that's reasonable. Have never heard of Sazon Goya ever. I see the recipe actually calls for 'shudder' broccoli or cauliflower but I'd way prefer to add the ground round. :). I'm also pretty new to Chipotle but I do like it. Gonna bookmark. :)

    I have also tried a couple of mac n cheese recipes and they usually call for a TON of cheese. I wanted chipotle and when I saw this with not so much cheese I had to try it

    I know you dont like broccoli, and had I not taken it all to work for lunch today, I would have added it : )

    Home made Sazon Goya con Azafran

    Combine 1 Tablespoon of each of the following:

    Salt
    Black peppercorns, toasted and ground
    Garlic powder or granulated garlic
    Cilantro, dried or toasted and ground coriander seed
    Cumin seed, toasted and ground
    Oregano, dried
    Annatto (achiote) seeds

    Mix ingredients together well and use 1.5 teaspoons for each packet of the Goya Sazon your recipe calls for.


    But that doesn't help me a whole lot either as I have also never seen Annatto (achiote) seeds. :)

    That's a cheesy looking picture. :) I've never heard of sazon goya! I don't think I would like vegetables in macaroni and cheese. I'd leave them out but the bacon sounds good!
