Smoky Black Beans With Pico De Gallo by GKWillow

Made this (after finally finding Sazon Goya) late last night for dinner. I followed the recipe all except the cilantro. (Sorry, I dont like that stuff). I used a TBS of parsley instead. I also dont know the difference between the tomatoes I used or romas. Mine were home grown hammie-downs about the size and shape of a baseball. I usually double recipes so that I have plenty of leftovers. With this I did not. All I can say is when I took my first bite I wanted to kick myself. I was shocked at all the flavor. I really liked this. It made 2 good sized burritos that lasted all of 5 minutes. I do have about 1/2 cup of the tomato/salsa stuff left that I think will be great over scrambled eggs.

GK, thank you. Oh yeh. Here is the promised photo

There's THE photo! :D Thank you for it and your nice review...

Roma tomatoes are just a little more meaty with less seeds and juice. Parsley is the usual substitute for cilantro, so you were right-on. I know, people either really like cilantro or hate it.

    Thanks again. :)

Great photos! I could have used that get-up last night while frying my shrimp. :D
Roma tomatoes aren't round, Mr. P. They are kinda pear shaped. I use them a lot because, as gkw said, they have less seeds and juice. I like them on sandwiches because of those reasons.

Im glad you guys like the photos. It was more work getting the pic than I thought it would be. Glad the camera doesnt use film : O

And thanks for the explanation on Roma tomatoes. These did have a lot of seeds and water, which I drained out before adding.

Nice and juicy burrito with pico de gallo from another recipe. Added sour cream and jack cheese. From scratch black beans. :)
Couldn't find Sazon Goya either. Alternately used Adobo Goya.

I have made this recipe 3 times. It has great flavor. Love the bacon coming thru.

And yes, ML2C, that was me almost 2 years ago. I was being a goof......at the time I was being harassed because I use old welding gloves in place of potholders because I dont have any (and I still use the same gloves.....even with the hole in 1 of the fingers) and GK made a crack asking if I wear the helmet, too. So when I was frying up the bacon I threw on this getup...............
