WOW! Those look soooo good! I'm not a big oatmeal cookie fan, but I LOVE the idea of adding walnuts!!! Great idea JJM!

They are indeed delicious, even though I only used half the oats.
A trip to the store is in order. Ran out of AP flour too. Mixed bread flour and cake flour to compensate.
Cookies spread more than they should have. Go figure - half the oats.
Recipe is on the to re-do list.
No official star rating 'til then.

Points, were these crispy of chewy? I regularly sub bread flour for all-purpose in my chocolate chip and snickerdoodles and find they come out thicker and chewier, the way we like them. I haven't tried it in oatmeal cookies yet, but, since they're my husband's favorite, that's my next experiment.

This batch came out soft and chewy but still a little crisp because they were thinner than they were supposed to be. But remember, I didn't use the full compliment of oats.
Just got back from the store with some AP flour and oats. I'll try your method with bread flour.

Points, please post your results with the cookies made with bread flour. Since I have to slightly flatten the oatmeal cookie dough balls before baking, you may have to do that, too. A good idea would be to bake two test cookies side by side - one dough ball baked 'as is' and one slightly flattened, and see which cookie bakes up better.

I didn't know you could use bread flour in stuff other than bread! Neat-o!
