Slow Cooker Mexican Beef Barbacoa

    Okay so this is kind of amazing! Coffee does stuff for recipes in such a great way ;) Not a fan of Mexican Oregano but in this it didn't bother me. Also only had fresh thyme so I used that. I didn't have the Ancho chilies but I did have some dried cascabel chillies so I used those. If you make this you have to try and find that hot sauce (Valentina's) that she suggested, it's SO GOOD, and affordable too!

Until recently I had never heard of using coffee for an ingredient or marinade and now I have to try this too. Plus that's an awesome pic. Thanks for the heads up ML2C.

    Lol! I got it closed but just barely ;) Thanks Frankie it was so good but let me tell you this makes A LOT!!! We were eating on it for days and my husband even had 4 guys come over and they had 2 or 3 tacos each and there was still like 1/2 left! We had it on buns one night too and it was good that way!

    Lol Frankie! It's a lot of male-ness around here lately! They seem to like our house and now I feel like I'm cooking for a herd! On our last night of eating it we started to come up with creative ideas to use it on, for next time,...like pizza! Or on some nachos?! Yum!
