    Recipe by Doreenfish: Slow Cooker Rotisserie Style Memphis Chicken/saved
    Plenty of rub in this recipe but instead of saving it for another clucker I piled and patted it on thick.
    Used my 7-quart slow cooker. Clucker slumped after 6 hours so it was pretty much done then but I let it cook for the entire 8 hour period. No way was I lifting this one out in one piece.
    Juicy and with good flavor while fresh and hot. Leftovers, breasts, were on the dry side when reheated.
    I would pull it early next time, when slumped, or use the smaller crock pot.

    Looks delicious! So you think 6 hours cooking time would be sufficient? How big was the chicken you used? I'm asking because I tend to over cook chicken (in a crock pot) even when following the recipe to a "T"

    Depends on the size of the crock pot. Different size, different wattage, different results. It's a lot like a microwave in that respect.
    Best to use a temperature probe.
    I should have known to pull the chicken when it appeared to slump a little in the pot but my OCD took over and followed the recipe to a "T".

    The small round crocks are about a 3-quart capacity. The larger oval ones are about a 7 1/2-quart capacity. It makes sense that the larger crocks have more heating element to wrap around its perimeter, ergo a hotter cooking temperature.
    Meat thermometers are good for checking oven roasts too.
