Spaghetti Squash

    Spaghetti squash is such a unique item.
    Mother kept on saying brown sugar and butter all the while I was putting the dish together. That's the way she likes any squash, especially acorn.
    Managed to keep her away from things while it all came together.
    Sweated up some 'shrooms along with the onion. Added half a jar of mushroom flavored spaghetti sauce. Mixed all up and served in the shells after adding a little more sauce on top along with some sharp cheddar and enough dwell time under the broiler to melt the cheese and just start to get a freckled brown.
    Delicious, delicious, delicious!
    Mother says delicious too.

    I have made the spaghetti squash and have actually fouled my guests into believing that it was spaghetti - I especially like to take and make a spaghetti pie out of this squash - cook the squash as you would for this recipe and literally use it exactly as presented - generously coat an 8" pie plate with pam or anything you want to prevent sticking - make your favorite meat or veggie sauce - place the spaghetti squash down into the bottom of the pie plate and with your hands firmly push into the pan as though you were making a pie shell - add your sauce and top with parmegano romano or your favorite italian cheese - bake for 25 mins at 325 degrees - comes out prefect - the other thing I like to do is make the recipe as described by pointsevenout and add two eggs and 1/2 cup half and half and an additional 1 1/2 cup grated cheese - press into the pie plate and bake for 30 mins at 325 or until golden brown and now it comes out like a quiche!! and the list goes on - this is a very versatile vegetable that can foul people to think it is pasta!!!!
