    Saturday Night Special

    As I said on the recipe page, I was a lil unsure mostly about the olives and eggs but this turned out really good!

    Here's what I did: venison instead of beef, I added some garlic and heat, and I served it over garlic bread which I had topped with the cheese. So, the hot bread and the hot beef mixture melted the cheese into yumminess. The sour cream and halved cherry tomatoes just went on top. :-)

    Now, I will say the only problem I had that would make me make a minor change next time, is that there was a lot of liquid, here. A pound of spinach alone yields so much water, but add the mushrooms to that and it's noticeable. So much so that when I added the eggs, they sorta got absorbed in the liquid so they were discernible in the final dish and I had to serve it up with a slotted spoon. So, next time, I'll just drain lightly after the spinach cooks down then add the eggs. Don't over drain, though, cus a lil of that stuff soaks into the bread and is too good to miss!

    Dinner was done in no time and it made a lot.
