Saturday Night Special

- 1 lb lean ground sirloin shopping list
- 1 large onion finely chopped shopping list
- 1 T Worcestershire shopping list
- 1/2 lb fresh mushrooms shopping list
- 1 small can ripe olives, sliced and drained shopping list
- 1 lb fresh spinach, washed, trimmed and chopped shopping list
- salt and pepper to taste shopping list
- 2 large eggs, beaten shopping list
- 1 ripe, med. tomato chopped shopping list
- sour cream shopping list
- Shredded swiss cheese shopping list
How to make it
- Saute beef and onion in skillet until beef is brown and onions are tender
- Add worcestershire, salt and pepper while browning
- Add mushrooms and ripe olives, saute until mushrooms are tender
- Add spinach, and another dash of salt and pepper; saute lightly, turning constanty with a fork (you will need to drain at this point. I usually leave just a little liquid to soak down into the bread).
- Add well beaten eggs and continue turning with fork until eggs are set and evenly distributed throught the mixture
- Serve as a one dish meal with plenty of crusty Frenc or Italian bread
- Top each serving with chopped tomatoes, shredded cheese, and sour cream
