    Came across another Keni recipe that I wanted to try! :)

    Spinach And Tarragon Frittata/saved

    Review and pic on the recipe (accidentally uploaded same pic twice) - I didn't get to make this for Keni Cooking Day, but have wanted to try this one for quite a while. Keni had mentioned tarragon a few times - I ALWAYS hated it, with the same passion that some folks hate cilantro, etc - but little by little I kept trying it and lo and behold, I actually like the flavor now! This is a great frittata! So simple, but very elegant!

    That IS and amazing pic.! I don't care for dry tarragon too much but I love it fresh! I would sub out feta for the goat cheese...I bookmarked this. Thanks for posting Christine :)

    Yum, yum YUM! This worked out so great!! I had a 16 oz container of baby spinach and I just tried to eyeball half. Took me quite a few batches to get it all wilted in my 10 inch pan. Used feta :) Very delicious and can't wait to have on hand to reheat for my breakfast! Added a couple of pics.
