Ingredients

How to make it

  • in a 10inch cast iron skillet, melt butter over medium heat.
  • Add onion and garlic and cook until onions begin to soften.
  • Meanwhile, in large bowl, whisk together eggs, cream, Dijon and hot sauce until well beaten.
  • Add salt and pepper and whisk once more.
  • Add spinach to the skillet(a lil at a time, if needed), turn off the heat, and stir with the hot onion mixture to wilt the spinach.
  • Add the tarragon a lil more salt and pepper and mix well.
  • Pour egg mixture into the skillet
  • Sprinkle the goat cheese over the top(I didn't do this until half way through the baking, so it didn't brown. Tasted great but looked like marshmallows :)
  • Bake in a 350 oven for about 20 minutes until eggs are set and edges are starting to get golden brown.
  • Slice like a pie and serve.

    This was so delicious! Tarragon has always been an "iffy" flavor for me, but you got me to experiment with it a while back and I must admit, the flavor has grown on me! It goes so well with this dish, especially with the dijon flavor in the background! I kept wanting to try this, and kept forgetting to pick up goat cheese, so I used some herbed cream cheese instead. Very easy to make, but the result is a very elegant addition to a nice breakfast or brunch buffet! I will definitely make this again!
