Spinach Ham & Mushroom Quiche

    A nice quiche. Had it for breakfast with steamed potato and green beans. All cold. Guess I was pretty hungry. I'll have a slice this afternoon warmed.
    Just happened to have an extra pie shell that needed to be used up and had most all the other ingredients.
    Used ricotta instead of cottage cheese. Store didn't have a small portion container of cottage cheese so ricotta is very close.
    Blind baked the crust first. Instructions didn't call for it but usually in a wet pie the crust is pre-baked to keep it from getting soggy.
    Destructions have a couple problems. It says to add the cottage cheese measure twice and nothing about adding the mustard. Besides that, all else came out exactly to spec.

I enjoyed it too. When I made it I also added some green onion just because I had some on hand. That was a good addition and I love the photo you posted.

Bookmarked this one:) I'll have to wait to make this, I'm not using my oven these days..we have been experiencing extremely hot weather (right Frankieanne?!!!!) , I'll have to try this when we have a cool down!

    Yeppers! No dallying with this recipe. Had a slice warmed this time with the same steamed veggies. It's good hot or cold, or maybe I'm just plain hungry. Lost 10lbs last month.
