Tandoori Chicken

    Tandoori Chicken by Thenewagecook

    I thought I'd try a new tandoori recipe just to see how I'd like the different spices in this one.This recipe has a lot of curry spices that you might see in a tikka masala or chicken makhani, so it intrigued me enough to try!
    The overall flavor was good, especially topped with lemon juice and cilantro.
    I used fresh garlic and ginger rather than the jarred mixture I guess he's referring to? And instead of fenugreek I used yellow curry powder mixed with mustard powder and oregano to make up for the fenugreek flavors (after looking up substitutes online). I also subbed the cayenne powder for paprika and just added a pinch of cayenne so the kids would eat it! :)
    I didn't add the food coloring so the colour is rather blah. My chicken didn't get that toasty in the oven for some reason, I am guessing because I dolloped the tops with the leftover marinade! I should have broiled it to get the tops nice and brown.
    I served this with curried rice mixed with peas and cilantro.

    Overall a great recipe, but for the tandoori I crave I'll stick with Don's recipe for Tandoori Chicken Nirvana ! :)

    I've never been certain about food coloring being good to ingest either, Michelle. I refuse to put in into my hummingbird food for that reason.

    To make the rice, I add turmeric and a clove of garlic to the rice and cook it in chicken broth. Then at the end of cooking, I stir in the peas, some curry powder, s&p to taste, cilantro or green onions usually...lol...not really a recipe ;)
    I can't have red dye at all, it makes my lips go numb! When my son was small he went thru these bouts of stomach illness (putting it nicely!) and later found out it was from food dyes. So we stay away from the stuff! Red and blue are the worst colours, and even orange dyes have been known to cause ear infections etc.

    If you ever try it Diz, then please try Don's recipe. The garlic, chili powder, cumin, coriander is just like a taco seasoning. But then you add ginger, lemon juice and yogurt and it changes it to something spectacular!
    Other recipes that use garam masala can be a little tricky since every brand of garam masala spice can be greatly different! It's most pronounced flavors are cumin and cinnamon, with a little coriander, clove or allspice etc..I've had some brands that were mostly cumin flavored, while this last one I bought is very cinnamon-y. I actually used it in ginger molasses cookies and it was good, lol! But I don't care for it in curries so I only use a 1/4 of what's called for in the recipe. So, that's a good place to start if you ever venture into the garam masala world! Use a little to start with :)
