Thai Lettuce Wraps

    These were wonderful! Made a couple of changes which I don't think affected the overall flavor much...I couldn't use the red chilli pepper, so I used a red bell pepper. Didn't have shitake mushrooms so I just used regular buttons and I didn't have shallots so I used a yellow onion. I really prefer to use romaine in lettuce wraps because they are sturdy and taste better than iceberg, but I actually only had red leaf, which is delicious, but not very sturdy so it made it a bit harder to eat, but we made it work :) I served this with a sauce I made to either dip or just drizzle over which consisted of 1/2 soy, 1/2 water, fresh grated ginger, garlic powder, and sugar. went perfect on this! So good, we all loved it!

    That is a lot of ingredients. Truth be told, when I see that many ingredients in a recipe - I usually go find another. You're very ambitious. :) It looks delicious - and healthy! :)

    I chopped up my veggies which actually took the longest (which wasn't long at all) and everything else just kinda fell in place, just grabbing stuff out of the fridge. I forgot to say I made some white rice to put in these as well to add that needed starch for the families happiness and that took longer than getting this recipe thrown together!

    I have heard that phrase before but the actual Wendy's commercial (okay I looked this up out of curiosity) that aired that phrase was in 1984, one year after I was born :)
