Tomato-chipotle Shrimp With Rice Pilaf

    Recipe by Gkwillow: Tomato Chipotle Shrimp With Rice Pilaf/saved
    Nice shrimp flavor. Doubled the recipe. Nixed the rice and replaced with spaghetti.
    Didn't have the chipotle chili; subbed half regular chili powder and half smoked paprika.
    Just a little heat with a smoked flavor and the natural sweetness of shrimp.
    Took an extra minute to saute the shrimp because the recipe was doubled.
    Used Mikes Famous Spaghetti Sauce/saved by Pleclare. Nice flavor on its own. Added 1.5lb halved 'shrooms at the end of simmer time. Used both cans of paste. Didn't have to add any brown sugar and that's OK with the doctor. A nice deep savory flavor. Makes enough sauce for 2lbs spaghetti. So we're up to our gullets with these two dishes.
    Have to remember to pace myself when devouring this combo dish.
    All my pics came out blurry today. This is the best one.
