Yum! Made Corinne's Roasted Tomato Soup this afternoon. (Yes, I was in soup making mode today)
Roasted Tomato Soup
I meant to halve this recipe as there is just the two of us, but as so often happens when I attempt to do that, part way through the recipe I forget I'm halving, and I throw in the entire amount. LOL! So....I used 2 lbs. of tomatoes, lovely ripe ones fresh from the garden, 3 cloves of garlic, 1 1/2 cups of chicken stock but then I cooked an entire medium onion, (we do like onions anyway) the entire 1/2 tsp. of oregano and the entire 2 tsp. of sugar. So basically I guess mine would be a little more onion-y and a bit sweeter, but I bet you couldn't really even tell. I actually did not add the cream, nor did I strain the soup through a sieve. I always feel I'm wasting if I sieve things out :) and I totally don't mind eating tomato seeds. More fiber right? :) The soup was super delicious. Tastes like Harvest time. I was really impressed with roasting the garlic cloves in the oven along with the tomatoes. They were lovely and juicy and soft when I added them to the broth. Corinne warns to be careful with the blender. I used my immersion blender in the pot and did indeed get a bit reckless. Had to swab down the wall behind after. :)
Will totally make this again. A great recipe. Thanks so much Corinne!
P.S.
Am I supposed to post in IMI and the Soup Again String, or just the Soup Again string? Or does it matter? :)

You can post in IMI or the soup string or both. I think pso just likes all the soups in one place. As for me, I'm just happy when people post anything in IMI at all! :)
