Twice Baked Breakfast Potato

    I'm a Potato monster and I adore twice baked potatoes so this recipe had me all over it.

    I have to admit to not following the instructions exactly. Since I make twice baked potatoes a lot I decided I'd more or less cook it like I usually do using Frankieanne's ingredients. So yesterday I baked my potato, just took off a thin slice of the top and scooped the insides out. Mashed it right away with the cheese, milk, garlic and a little margarine. I made a little well in the middle and then left it in the fridge overnight. Waking up this morning I realized that the way Frankieanne does it the potato would be warm coming out of the microwave and ready to receive the egg and my potato was stone cold coming from the refrigerator. So I baked my shell in the oven for maybe 15 min. and then added the egg. The egg did overflow and next time I'll follow Frankieanne's advice to put down a piece of parchment paper as that would indeed help clean up. I baked it for 10 min. and then added the bacon and chives (used chopped green onions but same diff) and then I put it back in for five minutes. It still looked jiggly when I took it out so I put it back in for another few min.
    It was delicious. They way I did it I only made one entire large potato for myself. :) (Told you I was a potato monster). I'll cook it exactly to Frankieanne's baking instructions next time and I'm sure the egg will come out soft. Mine was cooked through but still super yummy. The whole thing was so yummy actually that I ate it skin and all. :)
    This would actually be a super nice dish to serve for a nice breakfast on Christmas Morning or whatever. You could prep ahead of time and just finish them off that morning. Something a little different.

    YUM! I looks and sounds delicious! I would probably do the same thing as you, Janet .Bake the potato ahead of time. I am not much of a morning person and having things ready ahead of time would make all the difference for me. Especially when you have guests for breakfast or brunch.

    I have never had luck baking eggs until I made this recipe. I think that the hot microwaved potato really helps cook the egg. If you wanted to make this without all the morning hassle, I would suggest putting the potato and stuff in the bowl, refrigerate overnight, microwave in the morning, stuff and then add the egg. I think that warm potato really helps cook the egg. It probably wouldn't hurt to leave the egg out overnight, too. I may add that suggestion to the recipe.
