Twice Baked Potatoes With Broccoli by Chef Irish

"MMMmmmm!!…..is right. Twice baked potatoes are always good, but the addition of broccoli makes them even better. I had an already baked potato and leftover broccoli that I wanted to use, so I mashed up the center and added all of the ingredients without measuring. I also added a dash of onion powder as a personal preference. Popped in the oven and baked until it was heated through and the cheese melted. So good and such a great addition to any meal."

Yum, I've made baked potatoes with broccoli in them but never twice baked! I never measure either, unless I'm baking or making homemade seasoning mix or rub. Another great picture Diz!!

I made a similar twice baked potato from a Rachael Ray cookbook, the kids will eat broccoli as long as there's cheese involved! ;)

Thanks Everyone! Sorry some of you have been blocked. Frankieanne, it's a basic recipe. Mash the potato with butter, milk, sour cream, salt, pepper. Then fold in shredded cheddar cheese and cooked broccoli. Rebake until cheese is melted.
