Vegan Cinnamon Pancakes

    Thin and flapjack like, even though I did use 2% milk.
    Used cheesecake flavoring instead of vanilla.
    No pic. Just like main photo.
    The covering technique really helps get these cakes done.
    Flavoring was OK but I prefer a thicker cake.
    Only gets 3-stars from me because of a personal preference for a thicker cake.
    Used homemade blackberry freezer jam.

At first glance, I thought it was your basic pancake recipe, but then I noticed it has no eggs. Is that why the pancakes have to be covered while cooking? I didn't get that part. The photo looks good, but, like you, Points, we like thicker pancakes.

I bought LorAnn's cream cheese flavored emulsion and added it to regular buttercream frosting hoping it would taste like cream cheese frosting. Oh my gosh, I had to add so much to even be able to taste anything that, by the time I finished, it was inedible! I specifically bought an emulsion because I'd read that's what bakeries use due to their concentration; a little bit goes a long way. I don't know if I did something wrong or what, but I ended up throwing out the frosting and the rest of the emulsion, which I won't buy again - yuk!
