Vidalia Onion Soup

    Cream Of Vidalia Onion Soup

    Only had three Vidalia onions left so halved the recipe. I'm one of the few people that actually doesn't care for sour cream so I didn't use that, nor did I use the nutmeg.
    This is a lovely fall soup. Very heartwarming. I love the bacon bits on top and although I didn't use hot sauce in it this time, I do think I'll try it next time. Still shaking my head over how sweet Vidalia onions are. :)

    I just know this will be just awesome! I will be using almost all of the ingredients except the hickory smoked bacon. I will probably use maple cured bacon or just plain cured bacon.     I was nervous about the white wine in the recipe to be honest Frankieanne but I try and make a recipe as is the first time round and then go from there, and it was nice.
    And I actually have a whole nutmeg in my pantry Michelle but I haven't really ever used Nutmeg unless it's in baking cookies so I was nervous to put it in the soup. Now hearing you and Corinne insist it's a plus I'll try next time. :)
    And Joce, I can't even tell you exactly what kind of bacon I used, but all bacon is yummy right? :) So I'm sure it won't matter at all.
    And Keni...it really does freak me out how sweet Vidalia onions are. It's really quite amazing.
