Cream of Vidalia Onion Soup

- 6 slices hickory bacon, thinly sliced shopping list
- 1 stick butter shopping list
- 3 lbs. sweet onions, thinly sliced (6-8 onions) shopping list
- 8 cloves garlic, chopped shopping list
- 2 cups dry white wine shopping list
- 4 cups chicken stock shopping list
- 1 bay leaf shopping list
- 1 tsp. dried thyme shopping list
- 1 cup sour cream shopping list
- salt and pepper to taste shopping list
- hot pepper sauce to taste shopping list
- 1/8 tsp. nutmeg shopping list
- croutons and chives to garnish shopping list
How to make it
- In Dutch oven, cook bacon until crisp
- Remove bacon with slotted spoon to a paper towel leaving bacon grease in pan
- Add butter, onions and garlic, cover and cook over low heat,
- stirring until onions are tender and starting to caramelize
- Add wine, stock, bay leaf and thyme
- Bring to boil
- Reduce heat and simmer 30 minutes
- Remove bay leaf
- Puree in a food processor or blender in batches
- Season with salt, pepper, hot pepper sauce, and nutmeg
- Add sour cream and combine
- Garnish with bacon, croutons and chives
- Can be served chilled too
