White Bread Machine

    Recipe by Zoe. Second time I made this loaf, over a year apart. Both times done by hand instead of a machine. Second time, used active dry yeast to get the double rise and more flavor. Both results comparable for crumb.

    All pictures are mine. First picture of sliced bread, from a year ago, shows some wadding at the bottom of the slice. Didn't use a bread knife for the cut. I did on the second one.

    Enough modification to the destructions to this loaf that I should rewrite the recipe.

    I use bread machine yeast and it is rapid rise yeast. They have recommended using that in my machine. I buy it in bulk in the refrigerated section. Then I found out that keeping yeast in the freezer keeps it for a much longer time and no need to thaw it out when you are using it either!

    Yeast for machines is for one rise and it gives the bread a little coarser crumb than a hand kneaded dough which gets 2 rises for more flavor and a tighter crumb. The bread machine yeast (quick rise) has finer granules and does not have to be proofed.

    Well, I was a the grocery store today so I grabbed some rapid rise yeast and came home and made this. This is a super soft bread although the crust was a bit too crunchy for my taste. The birds will love that though. I added a couple of pictures. I like the look of pso's loaves a lot better!

    It is very fluffy and soft, ml2c. Probably about the softest bread I ever made.
