Freaky Friday

    I hate having a Thursday off of work (even if it was spent running errands and doctor visits) and then having to go in on Friday, freaks out the whole mindset about the weekend. I'm confused, confounded and bassackwards this a.m. I have training classes to conduct at work and I have to dress up which is even more freaky. We sell tshirts, what do you think we wear? Tshirts.
    So do you think I can get by with a bedazzled tshirt?

    Loved the way we meandered all over the subject of life, love and the pursuit of good food yesterday. NO worries, just friends doing what friends do best.

    CB is growing by inches each day. What was inaccessible last Sunday is quite within reach today......better start moving the valuables to higher ground.

    Supper tonight is the homemade version of Tuna Helper stroganoff. Steamed broccoli with toasted breadcrumb topping (by request), Fruit salad (all melons with some blueberries). Easy on the cook and "not spicy" for the hubby.

    We enjoyed our veal parm and pasta so much,we are doing again tonight. Plenty of leftovers. Still cook sometimes like there are five of us.

    LOL Pat! I cook for an army, but, we take the leftovers in our lunches, so I kinda do it on purpose. Bryan especially could run up a big bill eating out with those 12 hour shifts. Takes his own snacks and drinks, too. He has a collapsable cooler type thing that looks like it would be Jethro's lunchbox! lol

    Both dinners sound good to me! Veal parm has always been a favorite. There used to be a privately owned restaurant in Knoxville called Pero's, that had the BEST veal parm. I ordered that every time I went, from childhood until they closed a few years ago. I really miss that place (now that I have thought of them again! LOL).

    I have never tried to cook with veal, or lamb. I started to buy some at the store yesterday, but, then I thought "I have no idea what this is supposed to look like". I was at wally world, and the one here is Lenoir City is hit or miss with the meat. Sometimes it's great, and sometimes I stop at Ingles or Food City for the meat. Any tips? The lamb seemed to be quite soft, is that right? And a dark color, almost like liver, but pinker. Is that right too? I've never eaten lamb. Can anyone give me some kind of reference point to taste and texture? We are having to come up with red meat alternatives, but, I guess it would actually be a red meat...wonder if it would aggravate the psoriasis the way beef does...? Probably leaves the veal out, since that's baby calf...

    Tonight will either be grilled pizza or pat's stovetop lasagna (not the real name) that I posted to the group yesterday. I didn't get home until 8:30, and Bryan had done the dishes before he went to work, Hillary was gone...I decided it was crazy to cook! Had some nice big tomatoes, so I had a good ol mater sandwich! (2 actually, but who's counting?)

    Bought some turkey breast cutlets last night. They are about the thickness of a pork chop. I'm thinking they would get dry too easily on the grill. Anyone done these before?

    We have TONS of leftovers too Pleclare!!! We had Italian last night and they gave us waaaaay too much!! Its enough for lunch and dinner today!

    Sparow....if you make that lasagna, please let us know how it works out! It such a cool idea! Never thought to do it on the stove top!

    I hated tomatoes when I was a kid, I was one of those kids that wouldn't eat the salad if the tomato guts were on it. Also hated Watermelon. THEN when I got pregnant with Rachel I craved both things Every DAY! i used to live next door to a bakery & had a tomate sandwich on fresh bread with watermelon for dessert. Now I love both things. Stange huh... & Rachel loves both. I also craved lobster & the doctor wouldn't let me have it while i was pregnant & Rachel LOVES lobster, she could eat it all three meals.

    The only thing I cook is lamb chops and they are out of this world good, and expensive so we don't have them often...I bet Greekgirrrl could hook you up with some great lamb recipes though....Should take a look at her posts...:)

    I was going to stop at the grocery store before coming home but its always a bad idea to go to the grocery when you are hungry. Got home starving and made myself cook a sensible lunch. Plundered through the odds and ends in the fridge and came up with a new burrito sensation Chimichurri Pork Burritos now dutifuly posted. That really did the trick and I'm feeling much better now.

    I am going to braise some steaks tonight. Have never done that. His fatness is always buying these steaks that say right on the package 'for braising' and expects me to work a miracle or something and get them tender on the grill. Not gonna happen and I am tired of trying. So I am following the recipe that is on the package and we'll see what I get out of em. I think maybe a baked potato to go with will be perfect Friday night dinner.

    Have never had veal parm and the one time I tried lamb I didn't like it. They looked really good in the package, like tiny little t'bones. I probably didn't cook em right.

    There's a lot of food out there I haven't eaten but would not be opposed to trying.

    I feel shamed showing off my cooking skills today. Just had some instant mashed potatoes. Followed the box directions then added some chicken rub and garlic powder to jazz up the flavor. My gums thank me.

    Sausages peppers & onions tonight, hotdogs on the grill for the kiddies and maybe some burgers too. made the Kahlua cake & some brownies.
    I just went back and read all last nights posts Gawd we are a fun and crazy bunch! Love the names for the husbands. Wish I could think of one for mine but I am not that creative.

    No Chinese here tonight....Les was beat when he got out of work and just wanted to come home...So, pizza delivery is what I see happening!!!...Not such a bad thing!!

    One of the recipes has you place an aluminum wrapped brick on the meatloaf as it’s cooling but doesn’t say to wrap the brick in the foil and place it in the oven along with the meat to heat it up. It’s my interpretation of the destructions that the brick needs to be hot. I could be mistaken.

    I always seed, chop, salt and drain the cucumbers to make them less watery. The Tzatziki sauce is much better. If you splurge and get real greek yogurt, it is so thick anyway you don't have to drain overnight in the frig. I don't drive to Tarpon Springs often enough to get the real stuff, so I make do with draining in dual lined coffee filters and the strainer.

    I'm claiming "TV Nazi:.....for you-know-who. Absolutely fits to a T.

    Changed up the Tuna Helper to Tunaskettii....no elbow noodes in the house, so we are having tunasketti if you dare to call it that. NO self-respecting Italian would ever make it, but it is a credible meal with enough garlic to keep the vampires away.

    Don't think I'd go through the trouble to seek out some Greek yogurt but if I saw it setting there during my normal forays I would pick some up.

Not only THAT, BUT, he will in no way shape or form use the phone until I feel he has demonstrated enough responsibilty to handle using the phone, and HELL NO about a driver's license in Aug. He MUST demonstrate responsiblity and maturity to operate a motor vehicle. (Side note about the appaw, he paid jason's dad out of all the trouble he ever got in, and athat was alot, he let his son steal from him to buy alcohol and drugs, so, NO, I did not feel bad about him helping out his grandson). ANYWAY - Jason never did THAT again!

    You go over your text limit? You don't have a phone. You work the bill off doing chores around the house, and if you complain, we can keep you busy enough to not have time to think about how bad you have it! LOL That was MY speech anyway.

    Had rough week, came home thinkging I'd talk Bryan into goingout, but, he was mowing when I got here...guess I'd better go feed Budha...

    AMEN Lori! Ang, I'd do exactly that! My sister when she was 18, almost 19 (old enough to know better) racked up a $300+ phone bill on my parents. It was only 1973 so that was a lot of money - the day the bill came, she split (basically ran away) before they came home to see it. Coward! Even though all was forgiven later, she never did pay my parents back and I think that sucks!

    Kid has been saying "don't worry I'll pay for it with this check and pay for that with that check" and guess what they don't add up to be enough money to cover her bills. Sadly, she will have to give up some of her expensive tastes in order to pay her bills. The new tops, new shoes, newest phone, forgetting to return the movie and getting charged full price for the video, a breakfast out here, a lunch out there and suddenly her phone bill can't be paid. Mom, I need my prescription refilled.......guess what that is your responsibility now, not mine. I pay for the insurance, you pay the copays.

    Yes, you must try the AB method of gyro. I don't think the foil wrapped brick is to cook the meat as it is to weight the meat mixture and compact it into a very firm loaf so you can easily slice it. (Please be extra careful when you drain the extra grease out ot the pan.....I sustained a nasty burn from the loaf pan and splashing the hot grease on my wrist) You really want it to be dense and firm to slice perfectly for the sandwiches.

    Thank goodness Ang, that you found a customer service agent with a heart.

    Tunasketti isn't all that much fun on a plate. It was however cheap and filling. So, it worked.

    LOL on mr I am always right, Pat. Depends what shift bryan is on...on day shift, he's buddha...when he's wiped out and coming off of two weeks of night shift, i think his royal ngegative ninnyness might be appropriate...(as in, finding something wrong with all my statements...seeming to argues, when he's actulally missing the whole point, or even funnier, saying the same thing I am saying, only in different way, and like he's correcting me....). Had two crown and sprite with lime, sat on the deck in the cool night air...(In July, no less)...and now I think I'm off to bed.

Ate most of the tomatoes but some skins and hard parts of the heart I had to leave. Made me venturous enough to make some rice tonight with a little cheese and spices. I don't really get that much chew time on the rice. It's more of sucking the flavoring out while the rice goes down, much like watermelon and its seeds.

    In my flat belly years I couldn't eat even the smallest watermelon seeds. Not anymore. I don't even feel them.
