    I have some green tomato salsa to finish up so we will have baja citrus marinated chicken in soft tacos with the fixins!

    I was so tired after shopping most of the day with The Bratty one yesterday--I used one of those Bertolli oven-bake dinners. I chose the stuffed shells in scampi sauce with shrimp. DELICIOUS!!! I knew there wouldn't be enough shrimp in there (I swear I think there were about 6 little ones in the two packages put together!) so I bought an extra pack of shrimp scampi to bake into the mix. HIGHLY RECOMMENDED---BUT BUY MORE MEAT---THEY ARE NOT MEAT STAPLES!

    So anyway--for today--I'd like to try the homemade flour tortillas and shredded chicken taco filling in the crockpot from LATINFOODIE (posted) over in the "I made it" group. Sounds like good stuff. The Bratty One will be thrilled to see me make homemade tortillas instead of pulling them from a plastic bag, LOL.

    Caking the rest of the week---so I figure I'd better get the good food out of the way early this week, hahahahah!

    Have a pork tenderloin marinating that I will grill tonight. Grilled veggies, my dad's slaw, and may need to do something with the potatoes in the bin. I think they are about to sprout...lol A friend gave us a bag full of apples from his tree, and I gotta figure something to do with them too. Love cooked apples, and they will never keep til Sat. Probably have some of them, too! That's a lotta supper for 3 people...lol...but better than throwing it out. I swear, I think I'm gonna start buying some of the fresh veggies like mushrooms, they day that I'm gonna cook them! LOL

    Mother has a sack of tomatoes that have been setting on the counter for over a week. I think they are close to starting to get to old. Then up popped a recipe on my "try it you'll like it" screen for oven-roasted tomatoes.

    It's an all day roast at 175 f, tomatoes cut in half, topped with olive oil, salt and pepper and some spices. Had enough to fill a lipped baking tray. Sprinkled a line of them with seasoned meat tenderizer, another line with some cajun seasoning, another line with chicken seasoning, and the last line with Italian seasoning herbs. Went over the whole thing with basil.

    All should be ready at 5 pm or later. Maybe I'll be in a condition to try them then maybe not. But they will be processed and won't sit on the counter to be thrown away.

    My turn to vent! I am so POed at my husband right now. He has this uncle who is a total wackado. had some sort of a breakdown & tried to strangle his wife. the two grown children broke it up, he has 4 grown kids and non of them are speaking to him. He called & asked hubby to help him get a flight to visit my inlaws (his sister) in florida. My mother in law called last night and said what ever you do don't charge the tickets on your credit card. i told him I didn't feel comfortable with him charging the tickets for him either, I mean he is 50 something years old I am sure he has a credit card. Just talked to hubby and guess what he did????? He said well I have no reason not to trust him. so I named off the above things and said those 5 things were not reason enough!!!! along with me telling you I wasn't comfortable with it. So we will probably be eating the $300 charge.

Totally get your frustration! Hope the uncle doesn't take advantage of your hubby's generosity!

    Just talked to my SIL she said he called her first, but she talked to his son and he said don't do it. Noone even knows where he is living & he is a user. When she called her uncle back he said he already talked to Frank, but she thought he meant Frank his son, not Frank my Husband. What is with the sicilians naming all the kids the same name.

    Made it back from the dentist. Doc said he would indeed remove the pain from my gum and put it in my wallet. Took some pictures and said I had a cyst. Going to knock me out next week and have his way with my gums. So until then I'm looking at more mashed potato plates and pancakes.

    Tomatoes are still roasting away. Maybe I'll try to sample them somewhere between 6 to 9.

    The Fatness is working late so not really cooking dinner. He's on the South side of town so I'm sure he'll find something over there. Plenty of leftovers and I cooked up a bunch of that bacon this afternoon to have on hand. In this house, it wont last long.

    I've been craving some chicken tacos but will have to put that off till next week.

    Hopefully will get to go to Joe's Crab Shack this weekend. Family is coming up from Ark. to visit Branson and SDC and we are gonna meet them there. Can't afford SDC (Silver Dollar City) would cost us almost 300 just to get in the gate! Maybe we can at least meet them for dinner and some go-carts....

    Sparow, I vote apple crisp, with vanilla ice cream and some caramel sauce drizzled on top....droooool

    Wynne, maybe we can hook up later? BB is on tonight and I've got that freakin farm to take care of! lol

    Lori, what a great gift of fresh produce, your plans sound wonderful. Apple crisp is so good. I'm testing an apple pie with cheddar crust for the kid's work. If I can make some extra money doing some of their desserts...all the better.

    Laurie, I hope all works out for you and you don't lose your money, I'd be livid too.

    Funny about the names. When worked in my first professional kitchen we had five Ed's working there.....#1 as a dishwasher (nickname Fred) #2 as salad prep (Eddie)
    #3 sous chef, (Red) #4 butcher (Big Ed) #5 line cook (little Ed). Mass confusion when anyone walked in and yelled "Ed"

    Planned overs were just so so compared to all of your meals. I'll cook tomorrow.

    Charlie Brown is sleeping with his head resting on top of my foot. He is one warm puppy. He has started to play well with the other dogs and they are accepting him nicely. He is just so loveable. Happiness is a warm puppy.

    The tradition is to name after the grandparents, Franks Grandmother was Assunta and Grandfather was Frank. Luckily for SIL the grandmother on the other side was Maria LOL . The Assunta's are called Susie at least the two in America are, the one in Italy I am not so sure about. My gradmother was Irene on my mother's side and Lillian on my fathers but in my family they didn't do that, I think it's an Italian and Mexican thing of respect.
    He said I never told him I didn't want him to put it on our credit card. just goes to show you (sorry points) but men don't listen when women talk. No use arguing about it, whats done is done. he is going to call his uncle tommorow to give him the paperwork and get the money.
