Sunday Suppers, anyone?

    Making that yummy pot roast with the pepperoncini and beef stock, (sorry can't remember who posted it). But, while at the doctor's office I saw a similar recipe in "O's" magazine. Made me want beef and more beef. I'll fix the hubby and daughters on toasted onion rolls with melted provolone. I'll put mine on a pile of cooked mashed cauliflower and pretend their mashed potatoes. I'll still be low carb and they will be happy with the sandwiches.

    Now, I need some ideas for the salad....and I think after a week of being so "good" I deserve a dessert. But what to do?

    Hubbard squash puree in cheesy rice. Half pint of rum-rasin ice cream. AGAIN! And will have more still left over. Hubbard is a BIG squash! My first one is 10"L x 7"W, on the smallish size.

    You definately deserve a dessert! I don't have any lowfat/low carb dessert recipes, although we are cutting back, and have all but cut out desserty - so I need some!! But, if you are gonna go for a dessert - I love the Easy Fruit Cobbler in the fall and winter. You can even use unsweetened pie filling and add some splenda...(the slaw and the cobbler are on my page).

    Think I am gonna fix organicmama's Italian Chicken Bake tonight; with a baked potato and salad. Easy to fix a little extra to have some leftover for Bryan to take to work tonight!

    INGREDIENTS:
    1/2 cup heavy or whipping cream (apprx. 8 carbs)
    4 teaspoons artificial sweetener (0 carbs)
    1 tablespoon cooca powder (2 carbs)
    Optional: spray can real whipped cream (0 carbs)
    PREPARATION:
    Put all ingredients, in order, in a blender. Blend and eat. For that special touch, spoon into a crystal wine glass and top with a small squirt of spray can whipped cream and a sprinkling of cocoa powder

    Pointsevenout---how did you fix that Hubbard? I love squash but I don't think I've ever tackled a Hubbard. I cheat and buy frozen butternut squash, a trick I learned when my son was alive, he adored it and it was the perfect texture and consistency for someone with swallowing issues. I just gave it a touch of real maple syrup, and butter and he would love it, as well as the rest of us.

    Oh, I'd so love to have a chili cook off as a fund raiser for Ty's scholarship fund. I just don't have the know how to organize. I have the city park and the city backing, but haven't got enough sponsors. Let me know if the poor-man's chili wins, sounds interesting and fun.

    Cut the top 1/3rd off with a saw. De-seeded and stringed. Filled the cavity with 1 cup brown rice and 2 cups water along with some spices and onions and mushrooms and bell peppers. Put the lid back on and baked at 350* for 2 hours.

    Found out that rice does not boil up propper in the squashes cavity. So poured the stuffing in a large sauce pan then scraped out the squash from the shell and added it to the sauce pan. Simmered covered for 45 minutes. Added some pasturized processed cheese. The Hubbard flesh is supprisingly quite sweet.

    The stuffed squash recipe was a flop but was able to salvage the food.

    I ended up with Orange fluff for dessert. Whipped cream and sugar free orange gelatin, it set up all fluffy like a creamsicle. I haven't tasted it yet, later on while watching the Housewives.
    Made a cucumber salad with onion, dressed with cider vinegar, splenda, salt pepper and touch of oil. All in all it was a very good supper.

    Today was "road trip" back home from MPLS...after 7 hours of driving (added an hour to our trip because I had to drop off my neice in Winona - not exactly on our way, but close enough!), my daughter and I stopped at our favorite Chinese for take out...Singapore Noodles and Crab Rangoons - hit the spot! Hubby left MPLS and headed to Iowa with his brothers for pheasant hunting - we should be having some "pheasant nuggest" next weekend, and maybe some pheasant poppers. One of these days, I will post a meal that I actually prepared!!!

    Hey Krum...My best friend's hubby is on annual pheasnt hunting trip to Iowa this week, as well. They came home early last year, no luck at all. Came home and spoiled our girls' nite at their house, had just made the pitcher of margaritas when he called to say he was on his way...LOL...hope they have better luck this year! Hope your hubby has good luck, too!!

    Hey Sparow, my husband's brother is "magic" - he never gets skunked when hunting, so that's why my husband likes to go with him...however, their faithful hunting dog died this past summer, so we'll see how they do on their own...they only shot one yesterday, and I haven't heard yet today. I'm looking forward to some pheasant nuggets and pheasant poppers, so he better not show up empty handed! Don't you hate it when they come home early and spoil Girls Night?!?!?!? All you can do is dress 'em up in wig and dress, and make them participate!
