Talk about Tuesday

  • LindaLMT 6 years ago
    Good Morning Everyone.

Had my cold brew and sorted thru some electronic files. I woke up earlier than DH so it was a nice quiet thing to do while he was still sleeping.
Plans today are to get out and have lunch someplace and we will bring LD with us. Not sure about dinner because I'm always full after a lunch out but will still need to make something for DH.
Wrote up the recipe for the appetizer I recently had at a restaurant that I fell in love with. The combination of ingredients is just wonderful but goat cheese is super expensive at the store. $5 for a log that's about 3" long and 1" wide!! I hope Costco has a better deal. I also need to find a "thinner" balsamic glaze so I can drizzle better. If anyone has a better name for it too I'm all ears.
    Crostini Appetizer

Not much else happening here at the moment. Hope to hear soon what everyone else is doing today.

Morning Linda!! Enjoy your lunch out with DH. Yummy on the crostini recipe you posted, I really wished I liked goat cheese though :(

Had a great (and exhausting) weekend. As most of you saw on FB, we got first place in the tournament and got gold rings! We lost only 1 game out of 8, so the girls were giving it their best all weekend :)

At the gym right now then I have some work to do on the teams funds since I haven't updated it in a while. It got chilly today outside so I'm going to make chicken and rice soup with homemade broth. Have a great day everyone!!

Congrats to the girls for winning the tournament Michelle!! I bet they were super excited to have had all their hard work pay off with a win. Good for them!
Chicken and Rice soup sounds great! I could go for bowl myself.

Good Morning Linda! I think your appetizer recipe is fabulous. I'd probably call it something like "Prosciutton, Balsamic Crostini", just to give a bit more indication of the ingredients. I put maple syrup in my coffee this morning and you're absolutely right....it isn't too sweet at all, it's very nice. I was surprised. :) Enjoy lunch out and hope you find a fun spot. Can you just thin your Balsamic Glaze with a bit more balsamic vinegar or no? Sometimes in the summer I make my own and keep it in a bottle in the fridge. So fun!

With so many spreadable cheeses on the market these days Michelle I bet you can find something to sub the goat cheese with for Linda's appy crostini. I know for sure they do a spreadable feta (which might be too strong anyway) but I bet a nice brie would work wonderfully too! Big Congrats to Bri and the team for winning the tournament. That's pretty cool! And wow on receiving gold rings!!! Yum on your chicken and rice soup. I should make some soup this morning myself.

Got a couple of letters written to both my Mom and my Aunt first thing. Jim and I had poached eggs on sesame seed bagels for brekkie. Gotta get the ktichen cleaned up and the table set for dinner this evening, a few house cleaning touch ups, etc. as our company arrives late afternoon. I had the most ridiculous nightmare last night. I dreamt that I had ordered 6 plates of Prime Rib Dinner as take out from a restaurant to serve my company. I'd prepaid the order but when I got there they were sold out. I had to head home and tell my company (who were STARVING) that I didn't have any dinner prepared (and it was late already!) AND I dreamt that the restaurant's manager wasn't in so they couldn't give me a refund for my order. I was SO mad!!!!! Shaking head.

I have my monthly book chat this afternoon on the book about Beavers. Supposedly one of the group is bringing along a naturalist who knows a lot about beavers so that should be fun.

    Wishing everyone a great day!

    Oh! Dinner! :)
    Roast Chicken With Balsamic Gravy
    with garlic mashed potatoes
    Broccoli Casserole
because Jim's been requesting it (Just realized I forgot to buy the cottage cheese!)
    and perhaps a veggie tray.
I've decorated the dining room table with pinecones and candles and a red squirrel decoration. The girls are squirrel and chipmunk crazy. :) I also found these adorable serviettes with a red squirrel on them. They're gonna love it. :)

    Good morning.

Glad you posted, Linda. I thought about posting around seven ish but my mind went blank on what to rhyme with Tuesday. Aargh! Pre- coffee brain-dead, I guess. I will have to look at your recipe, if I try now the post will disappear. I bite the bullet and buy the goat cheese....it runs either 3.99 or 4.99, I think, for a small roll. But since I use a little at. A time and Wayne won’t eat it, I figure why not! Go ahead and treat yourself. No idea what to sub for goat cheese.

Hi Michelle. Saw the pix of the kids on FB. Congratulations! The rings are so nice. They must be really happy.

What a weird dream, Janet. I can’t imagine you serving takeout to anyone. I might, esp if it is a casual get together, like maybe Papa Murphys pizza that you take home and bake. But not restaurant meals....ha ha! Of course the closest Papa Murphys is 35 miles away, so it is not likely.

Wayne came home yesterday, ate super, took Fritz for a walk, and left for his sleep test in Rolla. He complained about the setup with the wires and electrodes, but they woke him at about 5 or 6 and was home about 7. He went to bed and slept until almost 9! He is on the way to Rotary and errands. We have GS tonight and so one of us will have to stay here if we want to order anything from Schwan’s.

Fritz was happy to see him, did not like him being gone overnight two nights in a row.

My iPad battery is at 10% so best go plug it in. Lots of work to get done today esp if I get GS duty and Wayne deals with the Schwan’s order....dangerous, the ice cream overload in the freezer would be detrimental to our Budget.

Change of plans. DH started cleaning the master bathroom ... what's up with that? He likes cleaning and I'm all too happy to have him do it so no lunch out today. Not sure if I want to change plans to have dinner out or just cook something here. Guess I better decide soon.

I much prefer maple syrup in anything Janet ... I like it better than honey or sugar for some reason. I like honey but find maple more "mellow". I've never used Balsamic Glaze before so not sure if it's the brand that's thick or what but next time I will make my own and it'll probably work better. I bet your little balls of Balsamic would be good on the Crostini too! I like the name.
Enjoy your company. That was a weird dream ... ???
Baby beavers are the cutest little creatures! One of the shows I use to watch "Bandit Patrol" rescued a baby beaver and had to teach it how to be a beaver. I don't know whatever happened to the show. It hasn't aired in some time.
    Yum on dinner!

"Pre-Coffee Brain Dead Tuesday" would have been an excellent thread title Karen, jus' sayin'. :) LOL! Hope Wayne's sleep test results will be good/helpful. A girlfriend of mine just did one. She ended up getting a CPAP machine but she's doing quite well with it and has SO much more energy now she doesn't suffer from 'fog brain'.

You can totally get a better price at Costco for the goat cheese Linda. I was there yesterday and saw some but it's a pretty big log so normally it'd be too much for Jim and I unless we had company. LOL @ an ice cream overload from Schwan's. :) You're right, the Balsamic pearls would go really nicely on your crostini appetizer. I second baby beavers being ah-dorbs!!!!

    I've got Point's
    Celery Soup
    simmering for lunch. Yum.

SP Karen! That's the way I look at it. Splurge on something good but don't buy any junk ... I'd rather spend the money on something good and healthy and it's incentive not to buy cookies, ice cream, snacks, and such.
I can't imagine doing a sleep test ... how could anyone fall asleep comfortably in a strange place let alone with things hooked up to you. Poor guy, I bet he was tired when he came home. Ut-Oh on ice cream overload if Wayne orders ... LOL!

Good to know I can get goat cheese at Costco Janet, thought I would be able to. I can always portion and freeze.

Took out 1/2 chix for dinner to thaw and will roast it along with potatoes and broccoli. Not really in the mood to go out for dinner. I'll spend today cleaning too.

I never thought to freeze goat cheese Linda but you're absolutely right. I do it with cheddar and mozz all the time. Your dinner plans sound lovely.

Linda. always encourage husband cleaning obsessions - I do much better if Wayne helps with the cleaning. He is a better picker upper and furniture mover, I do much better cleaning -- although he would disagree about that part. Heh heh.

We eat out too much and it is detrimental to the budget, with GS with us 3-4 nights a week, it is sometimes a glut of fast food! He is picky and his mom caters. So I am the bad grandma who gives him a couple of choices and that is that. We get the $5 box deals at Hardees -- he only eats the chicken strips one. I threatened to bring a pbj sandwich for him if didn't start eating what he orders.

In hindsight that would have been a good title, Janet. Ha ha! He had a sleep study before, but the doctor wanted another one to see what changed. They have you in your own room, relaxing, tv watching, etc. in order to put you in the right frame of mind, I guess. Then it is lights out until they have a long enough time for results.

There! I'm all done. Also cut up veggies for a veggie tray and made a jar of
    Heinz 57 Dip
as well. The soup will be ready for our lunch and then I'm off to the Book Chat. That morning passed by quickly!

Questioin: what is the black bar that is at the top of the page? It has a half circle in the center and a small x on the side (to get rid of it?) I am afraid to click on the circle, what with the weird postings.

I don't see what you are seeing Karen. Sounds like you page didn't fully load?? Try closing it and opening it back up and see if it changes.
I give DH 2 choices ... one or the other and that's it. And I think I'm being kind even doing that. LOL!

I don't see anything either Karen. It is hard trying to please picky kids. I think a person is more patient when they're younger. LOL. I know I was.

The Book Chat was a blast. The person who put forward the book brought along a local naturalist and trapper who knows a lot about not only beavers, but skunks, porcupine, turkeys, ground hogs, you name it. He was very interesting and very entertaining. Totally enjoyed myself.

The chicken is in the oven, gravy's made and everything else is prepped. Thought our guests would be here by now but they must have run into traffic. Have a great night everyone.

Good evening and hello to all. Will have to read back as I have missed a couple of days. Don't see what you are seeing either Karen. Nice on hubs wanting to clean Linda! Makes him feel useful too!

Well, hubs and I have had a few heart to heart discussions the last couple of days. I told him that while I totally understand that he needs to lose weight that I, on the other hand have to keep my calorie count on the higher end. I reminded him of a few years back when I had the flu, then I got pneumonia and was sick for 4 months. Even my doctor didn't think I was going to make it through as I had lost sooooo much weight, there literally wasn't anything left of me. I really thought, I was going to die. I said, what if that happens again, I'm older now and even more vulnerable. I have to keep my weight up. This isn't to say that I should fill my body with junk food, not at all. I talked with my Aunt the other night. She had a great idea. She told me to start drinking the Ensure Plus again like I had to back when I was sick. It has 350 calories per bottle. She reminded me about how I so enjoyed it because it's like having a chocolate milk. Milk upsets my stomach and I have not drank it since I was very young. Ensure is dairy free. So, will go and buy some of that as that is nothing that hubs would want. Thanks Aunt Vaunie! Had so forgotten about that stuff. And I do so enjoy the flavor of them. Meanwhile, I will continue to make "healthy" meals that will help us both. We also are now keeping our grandson more after school as there was a big blow out with my daughter's ex and his mother this last Friday. That's a story for another day but it was a horrifying experience for my grandson. So between our family, we are picking him up each day after school. He used to be picked up everyday by his Meemaw, ex's mother. She has chosen her drug addicted son over her grandson's safety so........we have stopped that! So I have special snacks for him that I have told hubs.............NO! I'm not locking them up, use your willpower, lol! I also admitted that I was edgy over the weekend due to Michael's new orders. When he returns from his tour overseas this June, he has been ordered to move to Alaska. Drat! So far away. He owns a home in Clarksville, TN. He bought only because he was promised he would be there for at least 6 years. But he recently got a promotion and knew they would want him somewhere else. Oh well, such is the life in the military! He's hoping to be able to rent his house out. Wasn't happy with that news so I guess it added to all the frustration!

But speaking of "healthy" meals, tonight is my cheese night, lol! No healthy there for him, lol! Have offered to make him a chef salad and that is probably what I will do. Tomorrow night doing a simple chicken in the IP, not sure on sides yet. No doubt a salad will be envolved! Best get going on dinner, getting late!

Sleep either calorie free or calorie enriched Sweet All................as always.................

Sounds like your book chat was interesting, Janet.

It is so bad, Kimmer, when people allow / enable drug addicts to continue their lifestyle regardless of how it impacts their family. Yep, the military does tend to move you around when you are promoted. Hope he sells or rents it soon -- there should be some realtors wheo specialize in renting, they do the work for you.

The infamous black bar with red circle (actually you only see half, with a white bar in the center), is still here. I may have my daughter look at it to see if she has ever seen one. It is only on this site. My virus detector program, Avast, is for MAC's and has not found anything weird.

Hi everyone. I just read back and I saw that you asked how I fared in he storm. We only got rain but the winds knocked out power to most of the town. We didn’t lose power though. Now we are supposed to have a storm tomorrow into Thursday which totally suck since Frank is out of town for a work conference and I can’t shovel. Last time I shoveled I was sick for weeks.
Joy had her check up at the vet. It cost an arm and a leg (and a foot and hand lol). She hadn’t been in a while so she needed all her shots. Had blood tests got her heartworm meds. She tested positive for a tick borne illness so she got antibiotics. Right now she is her crate growling at nothing. Not sure if she is having a nightmare or just overwhelmed by the hour long vet visit.
Since frank is away. We eat things he doesn’t care for. Sunday night we had grilled salmon with cauliflower mashed. Yesterday we had fish tacos and tonight I had a stuffed portabella mushroom.
