TGIF!

    So glad ii's Fri. Still not feeling great but better so off to work.

    Doing my fall back on rotisserie chicken. Hubby loves it. Mashed potatoes and creamed spinach with it.

    In the mood for soup so it's Panera Bread Broccolli and Cheese soup in breadbowls tonight. (posted) Never had that green salad last night so it'll go with the soup tonight. The Impossible Pie came out really good....Didn't have green chilies so I added chipotle finely chopped.

    Also having roast chcken this evening and I made up a batch of oriental cole slaw and am planning on making some apples with cranberries to go with. That should do it.

    Its so nice to have the house open again and the weather warm. The yard is a disaster of brown, melting ugly plants. I'll just have to ignore them as I'm pretty sure another cold snap is just around the corner.

    If it's wings, they will be the sticky ones. If it's pork chops, just fried naked in a pan with some good seasonings on 'em. Either dinner is getting a side of couscous with pine nuts and some fresh broccoli to go with.

    My ribs are all rubbed down and ready to go on in about 2 hrs. Deviled eggs are all made and I just need to get the baked beans going. Doctored-up canned ones. I think I need to build an ark if this rain keeps up!

    I love White Castle burgers too. I make a homemade version using Alton Brown's recipe....he cooks them on a sheet pan and cuts them up with a pizza cutter. They are so good. Have to have the little Publix dinner rolls and sour pickles or they just aren't right. Used to be a favorite party food for the kid's parties...all mini foods.. bagel pizzas, little smokies in a crescent rolls, white castle wannabe's, little tartlets, brownie bites. So much fun for the kids...lots of work for mom. LOL

    Meah! The burger recipe I used wasn't "all that." Hubbs loved them but I wasn't so enthralled. I have a feeling TBO won't love them too much either.

    Next time (if there is one) I will try a different recipe. Meahhh.
