SOS

    Hi Robert,
    Was perusing the groups and saw SOS and beyond. It is way too underplayed as is Spam and not appreciated by many. Great stick to the ribs meal and from many places I have had it, it really stuck to everything regardless of the recipe in what manual).
    Many many moons ago when I was young, adventurous and stupid, I volunteered and was on loan to the State Department for a few years and of course, accommodations provided compliments most of the time by the army, navy and air force. Never had SOS onboard a ship or in port but did have mounds of it in army posts and air force bases. The army was never really creative, had some of the most unique adventures with them, but, the air force however was very creative and have some of the recipes (not really recipes but what was in it when I could find out) buried somewhere and I will will dig them up. The army was always on starch, potatoes and bread, for breakfast lunch and dinner. While overseas it was a taste of home to have it anytime I got homesick (well for American soil anyway). Following is the basic recipe I use. I smoke and dry my own meats so it is never a problem getting dried beef and I have tried it without dried beef, not the same. Never tried it in squash before. Interesting.

    Creamed chipped beef

    1/4 cup butter
    1/4 cup flour
    1 dash pepper
    2 cups milk
    4 ounces dried beef, sliced
    1 tbl finely minced onion
    salt and pepper to taste

    In a saucepan, melt butter.
    Mix in flour and pepper.
    Stir in milk (use whole).
    Cook over a medium heat until mixture boils and thickens, stirring constantly.
    Reduce heat.
    Tear beef into shreds; add to cream sauce and heat through plus 5 minutes.

He was in WWII and stationed down south on the coast, and, then was at Normandy, and, spent a lot of time outside Paris where he learned how to cook and taught me. He made it quite a bit but had the same mentality as the army. Toast and potatoes, but it was great!

    And yes... Navy does not serve this... Grandsons were looking forward to having it... and they serve more fresh veggies and fruits... I can see why my Hubby swiped from the Navy in Nam! Said those boys ate way better than anyone!

    I spent 4 years in the air force, so know what you mean about the army way of cooking.

    SOS is a favorite at the nursing home where I work. I grew up eating it but haven't made it for my family. I don't have any idea why, it's comfort food at it's best.
