    Lycett---I like to split a whole chicken, flatten it out. Throw it into a 1 gallon ziplock and place sliced/squeezed lemons, olive oil, seasonings (black pepper, garlic, salt,) on both sides. Place some fresh rosemary sprigs under the skin, 1/2 cup or so of worcestershire in there and a couple sliced cloves garlic. Mash out the air and freeze it.

    I keep one of those in the freezer at all times if I can. Then when it's time to thaw it---it's already marinated, it self-injects with flavor and toss it on the grill (low) for about 45 minutes.

    Good stuff!!

    pleclare....what a wonderful new group. I love BBQ's! We usually do many throughout the summer. Have one planned for Memorial day. Actually, I just love grilling. Living in Florida I'm lucky enough to be able to do it year round. I do a lot of packet meals on the grill, which my hubby says isnt real grillling, (naturally a man would say that, lol) but I say it is. I guess if his buddies and him can't hover over the grill, drink beer, fart and constantly turn the meat over and over til its dry as a bone, it aint grilling, lol. I'm sooo much better at it than he is! Course he never complains while eating one of my meals! Will go back and see what I have already posted and will try to get some new ones up.

    Knox.....Everytime whole chickens are on sale, I get one regular and the other, I ask the butcher to remove the backbone.....I marinade teither throw it on the grill or in a huge skillet and make chicken under a brick.......THanks for the tip on marinating before freezing....Good one...:)

    He has been doing it much longer than I. I just really started to enjoy it a couple of summers ago when I realized.....I can do it better. :)

    LOL....right there with you Ang! I taught Bryan to only turn the burgers once, and to NOT mash them, and he does good with them. But he overcooks the other stuff quite often! SOOOo I bought him a digital thermoeter to use...sometimes he does, and sometimes he doesn't. We had company for supper last Saturday, (the first time this couple had been here for supper, of course) and were grilling kabobs and vaggies. He way over cooked the meat, waiting on some of the veggiess...I was thinking to myself "WHY didn't he take the meat off? or move it?" LOL

Chicken was already way done and instead of moving the chicken to the upper rack, or in my opinion removing it all together, he just added my veggies and kept the chicken going. Needless to say veggies were great, chicken was...well...at least you could chew it if you had a good set of teeth.....they just don't get it, lol.

    Mine too has learned, FINALLY, to only turn the burgers once and not MASH them into oblivion! Hey I'm an optimist, he'll eventually learn or I'll be the one to do all the grilling!

    I have to be honest,I don't touch the grill. That is Phil's baby and he does a great job. Think it's a toss up. Knoew a lot of women whose husbands can't grill and others where the men do all the grilling and in some cases all the cooking!

    knox what a great idea on the chicken, and 2) wynne - love asking the butcher to do the hard stuff with removing the back bone of the chicken, gives me a good reason to see that cute butcher of mine...
