    Hi everyone!

    I thought it would be really fun to start a thread that posts links to recipes we actually made from the TOP CHEF episodes.

    Ok, I made this and I must be missing the boat here. My puree was not smooth, rather lumpy and bumpy...next time I am going to try steaming my cauliflower in the steamer first and then putting it in the blender (instead of the food processor) to puree. Also tried to add some greek yoghurt to help with the creamy texture - that helped a little. So my notes for a repeat are: steam cauliflower, use blender instead of food processor, and add greek yoghurt.

    This is from the Restaraunt Wars episode - tried to get the whole recipe but they don't have it listed. They served it with a seared scallop. (Spelling challenged today!)

    Can't say I have ever straight up tried to copy a recipe, but it often leaves me laying in bed after watching and dreaming up my next try at something wonderful. It is probably one of the most inspirational cooking shows on television. I am addicted.

    I have been keeping up with my favorite show and loved when they had Top Chef Masters on. Can anyone tell me what kind of cheese was used on the beet salad by Hubert? I've looked at the pictures and it appears to be a variation of mozzarella (?) I am a big fan of beets and have been experimenting with them. I would love to make this, but unsure about the cheese selection.

    Very cool link. Their recipes are inspirational and intriguing to say the least. I loved Top Chef Masters....so happy about Rick Bayless. I don't know if I would attempt any of his recipes, they seem to be very complex.

    I loved the recipes Rick Bayless made (especially his tamales) but I think I'll start with baby steps in attempting his recipes. (Maybe start with trying to make a simple tamale -since I have never tried before.) I liked the mole sauce on top of the tamale - I could eat that all day!

    Hubert Keller's recipes - some of them were beautiful as well...made me really want to try French cooking.

    What does Comte cheese taste like? Mild or more goat like? I have roasting the beets down....

    Tamales - how hard is this going to be? Any suggestions? I am really contemplating this.

    I made tamale appetizers for the 1st time in my mid twenties. I did not find it hard at all and they turned out great. I have always used parchment paper to make mine (very "white" of me, I know but it's the way I learned how to make them). :-)

    Nothing wrong with using parchment paper! I use shortcuts as well making my Italian food that would probably make my grandmother and aunts roll over! I love Pesto from Trader Joes and those self cooking lasagna noodles!

    Thanks for the tip (Considering I still can't roll a burrito - I always put too much stuff in it!) How do I use the parchment paper?

    Any other helpful shortcuts? How long does this take? I think T-time is going to be two weekends from now, since I am going diving this coming weekend. By then it should be cool enough that I don't bake the entire house out when I turn on the stove or oven. I am going to search the recipe bin (unless you have one) and see what I can find.

    Just picked the beets from my garden. While they are not very big, like the store bought kind, I think they will taste better!

    I will try to take a picture and post when I have made the roasted red beet and comte cheese salad.

    NYM: I too, am the only beet lover in my immediate family. My mom likes them, but she lives far away. I still make beets anyway, just not huge batches. I pickeled a bunch in small jars and I am fond of roasting one or two a week . I stretch them out (potent little guys!) in half beet increments. I recently discovered one of my diving buddies likes beets, so I took a small jar of homemade pickeled beets with me when we went diving and we had it with our lunch.

    Home grown: much smaller then anticipated. Gold ones didn't grow - just red ones. More food for thought when planning next year's garden.
