Dining In The Low Country

South Carolina has been called the Palmetto State, the Rice State, and the Iodine State. Pick any name, but the eastern part belongs, culinarily, to the Low Country where shrimp is king. Or is rice the king? In any event, combine the two for a pilau,and call it perloo.
