The garden is full of pickling cucumbers! What to do this time of year?? Make this easy old fashion refrigerator pickle recipe ! This recipe is about 50 years old, but a classic ! Enjoy. These keep 3-6 months in the fridge.

Ingredients
  • 1 Cup Sliced (medium) Pickling cucumbers
  • 1 Cup Chopped Vidalia Onion.
  • 1 Cup Green and Yellow Pepper, chopped.
  • 1 TBS Salt
  • 1 TBS Celery Seed
  • 1 TBS Mustard Seed
  • A dash of red pepper flakes (optional)
  • 1 1/2 Cups Sugar
  • 1 Cup Vinegar (i used white, but cider works too!)
  • 1 Tsp Alum (found in your spice aisle..must use to bind the pickles! (per MOM)

Directions
  1. In a sauce pan, add the vinegar, sugar, salt, celery seed, mustard seed. Red pepper flakes too if you use them.
  2. Heat on low until warm.
  3. In a large bowl add the sliced pickles.
  4. Sprinkle the alum over the pickles.
  5. Combine the onion and peppers to the pickle slices and toss.
  6. In a Large glass jar, add the vegetable mixture.
  7. Add the liquid into the jar.
  8. Make sure top is on tight and shake, shake ,shake!
  9. Refrigerate 24 hours.
  10. I doubled this recipe and made three 26 oz jars!

These sounds really good, but is the sugar necessary? I really like sour pickles the best.
