How to make it

  • Remove any fat from the lamb and chop into bite-size pieces
  • Roughly chop the onions and ginger
  • Fry the powdered turmeric coriander and cumin and the curry leaves in a little oil in a wok or deep pan for a few seonds until fragrant. It is important not to burn them. Remove from the oil.
  • Blend the onions and ginger to a paste.
  • Add the remaining oil to the pan on a high heat and cook out together with the fried spices for about 10 minutes
  • Add the chopped lamb and fry for a further 10 minutes stirring all the time to coat the meat.
  • Reduce the heat and add the chopped tomatoes and fenugreek leaves. Stir in the vinegar and cilantro add a little salt to season and cook covered on a low heat for 40 minutes. Add a little water if needed.
  • You should have tender lamb in a thick sauce with bags of flavour
  • Serve with basmati rice and garnish with a few cilantro leaves.
