This is my take on a Lamb Madras type of curry. Give it a try. I'm sure you will enjoy the rich warming flavours that come through in this dish. Works well with beef or chicken. Yum!

Ingredients
  • 500g (1pound) Lamb leg steaks
  • 2 medium onions
  • 1 inch piece of root ginger
  • 3 cloves garlic
  • 6 cloves
  • 6 green cardamon seeds
  • 6 black peppercorns
  • 1tsp turmeric powder
  • 1tsp coriander powder
  • 1tsp cummin powder
  • 2tbs dried fenugreek leaves
  • 1tsp dried curry leaves
  • 4/5 dried chillies
  • 1tsp balsamic vinegar
  • 1 400g tin of chopped tomatoes
  • 6tbs vegetable oil
  • Large handful of chopped fresh coriander leaves (cilantro)

Directions
  1. Remove any fat from the lamb and chop into bite-size pieces
  2. Roughly chop the onions and ginger
  3. Fry the powdered turmeric coriander and cumin and the curry leaves in a little oil in a wok or deep pan for a few seonds until fragrant. It is important not to burn them. Remove from the oil.
  4. Blend the onions and ginger to a paste.
  5. Add the remaining oil to the pan on a high heat and cook out together with the fried spices for about 10 minutes
  6. Add the chopped lamb and fry for a further 10 minutes stirring all the time to coat the meat.
  7. Reduce the heat and add the chopped tomatoes and fenugreek leaves. Stir in the vinegar and cilantro add a little salt to season and cook covered on a low heat for 40 minutes. Add a little water if needed.
  8. You should have tender lamb in a thick sauce with bags of flavour
  9. Serve with basmati rice and garnish with a few cilantro leaves.
