- 500g (1pound) lamb leg steaks shopping list
- 2 medium onions shopping list
- 1 inch piece of root ginger shopping list
- 3 cloves garlic shopping list
- 6 cloves shopping list
- 6 green cardamon seeds shopping list
- 6 black peppercorns shopping list
- 1tsp turmeric powder shopping list
- 1tsp coriander powder shopping list
- 1tsp cummin powder shopping list
- 2tbs dried fenugreek leaves shopping list
- 1tsp dried curry leaves shopping list
- 4/5 dried chillies shopping list
- 1tsp balsamic vinegar shopping list
- 1 400g tin of chopped tomatoes shopping list
- 6tbs vegetable oil shopping list
- Large handful of chopped fresh coriander leaves (cilantro) shopping list
How to make it
- Remove any fat from the lamb and chop into bite-size pieces
- Roughly chop the onions and ginger
- Fry the powdered turmeric coriander and cumin and the curry leaves in a little oil in a wok or deep pan for a few seonds until fragrant. It is important not to burn them. Remove from the oil.
- Blend the onions and ginger to a paste.
- Add the remaining oil to the pan on a high heat and cook out together with the fried spices for about 10 minutes
- Add the chopped lamb and fry for a further 10 minutes stirring all the time to coat the meat.
- Reduce the heat and add the chopped tomatoes and fenugreek leaves. Stir in the vinegar and cilantro add a little salt to season and cook covered on a low heat for 40 minutes. Add a little water if needed.
- You should have tender lamb in a thick sauce with bags of flavour
- Serve with basmati rice and garnish with a few cilantro leaves.
