pollo a la ajillo tapas

- 4-6 chickens thighs skin removed shopping list
- 4 large cloves of garlic,peeled and thinly sliced shopping list
- 1 hot red chil finely chopped shopping list
- 1 cup chopped parsley shopping list
- flour for coatign chicken pieces shopping list
- 3/4 cup good quality dry sherry shopping list
- 1/3 cup virgin olive oil shopping list
- salt to taste if required shopping list
- 1 table spoon brandy(optional) shopping list
How to make it
- dust chicken pieces with flour
- in a deep large skillet,heat oil add garlic till started getting browned
- remove garlic,add chicken and cook for 3 minutes on each side
- pour in the brandy and stir so chicken can soak the brandy.
- add chopped chilled pepper and 1/3 of the parsely. for another
- 2 minutes, add 3/4 of the dry sherry and cook covered for about
- ten minutes. add more sherry if it is too dry. and sprinkle remainder
- of parsely.
- make sure you have good crusty bread to soak the juices,nice ripe italian plum tomatoes and a good bottle of ''fino sherry'' or LA INA..
