How to make it

  • dust chicken pieces with flour
  • in a deep large skillet,heat oil add garlic till started getting browned
  • remove garlic,add chicken and cook for 3 minutes on each side
  • pour in the brandy and stir so chicken can soak the brandy.
  • add chopped chilled pepper and 1/3 of the parsely. for another
  • 2 minutes, add 3/4 of the dry sherry and cook covered for about
  • ten minutes. add more sherry if it is too dry. and sprinkle remainder
  • of parsely.
  • make sure you have good crusty bread to soak the juices,nice ripe italian plum tomatoes and a good bottle of ''fino sherry'' or LA INA..
