Cowboys Beef Wellington

- 2 beef tenderloin steaks shopping list
- 1/4 tsp. salt shopping list
- 1/4 tsp. cumin shopping list
- 1/4 tsp. pepper shopping list
- 3 tbls. cream cheese, softened shopping list
- 1/2 4 oz. can green chilies, chopped shopping list
- 1/2 sheet frozen puff pastry, thawed shopping list
- 1 egg, beaten shopping list
- 1 tsp. water shopping list
- salsa shopping list
How to make it
- Preheat oven to 400
- Sprinkle beef with salt, pepper and cumin
- Sear in skillet, set aside
- In mixing bowl, combine cream cheese and chilies, set aside
- On floured surface, roll pastry into a 16x12 rectangle
- Cut into 2 12x8 rectangles
- Put beef on one side of each rectangle
- Top with cream cheese mixture
- Fold pastry over meat and seal seams
- Put seam side down on baking rack that is on a baking sheet
- Combine egg and water and brush over pastry
- Bake 18-22 minutes
- Let rest 5 minutes
- Serve with salsa on side
