How to make it

  • Heat the butter in a large skillet, add the onion and garlic and cook for 5 minutes or until wilted but not browned.
  • Add the scallops, and saute for 2 minutes, stirring constantly.
  • Add the wine and continue cooking, stirring constantly, for another 2 minutes.
  • Remove scallops to a heated platter and set aside.
  • Stir in the basil and cream, and cook rapidly while the cream reduces and thickens, until thick enough to coat the spoon.
  • Taste and season with salt, if necessary.
  • Return the scallops to the pan, stir to coat with sauce and cook for just a minute to reheat. Do not overcook or they will become rubbery.
  • Serve immediately with rice and a garden salad.
