Scallops With Basil And Cream Recipe
What quick and easy way to impress your guests! This recipe comes from the Legal Seafood Cookbook ( a very popular Boston seafood restaurant). They recommend using small Cape (bay) scallops or, if you can't find them, cut sea scallops in half.

Ingredients
  • 4 Tbsp butter
  • 3/4 up chopped onions
  • 1 1/2 tsp minced garlic
  • 2 lbs Cape scallops
  • 1/2 cup dry white wine
  • 4 Tbsp finely chopped fresh basil leaves
  • 1/2 cup heavy cream
  • salt (optional)

Directions
  1. Heat the butter in a large skillet, add the onion and garlic and cook for 5 minutes or until wilted but not browned.
  2. Add the scallops, and saute for 2 minutes, stirring constantly.
  3. Add the wine and continue cooking, stirring constantly, for another 2 minutes.
  4. Remove scallops to a heated platter and set aside.
  5. Stir in the basil and cream, and cook rapidly while the cream reduces and thickens, until thick enough to coat the spoon.
  6. Taste and season with salt, if necessary.
  7. Return the scallops to the pan, stir to coat with sauce and cook for just a minute to reheat. Do not overcook or they will become rubbery.
  8. Serve immediately with rice and a garden salad.
