Scallops With Basil And Cream

- 4 Tbsp butter shopping list
- 3/4 up chopped onions shopping list
- 1 1/2 tsp minced garlic shopping list
- 2 lbs Cape scallops shopping list
- 1/2 cup dry white wine shopping list
- 4 Tbsp finely chopped fresh basil leaves shopping list
- 1/2 cup heavy cream shopping list
- salt (optional) shopping list
How to make it
- Heat the butter in a large skillet, add the onion and garlic and cook for 5 minutes or until wilted but not browned.
- Add the scallops, and saute for 2 minutes, stirring constantly.
- Add the wine and continue cooking, stirring constantly, for another 2 minutes.
- Remove scallops to a heated platter and set aside.
- Stir in the basil and cream, and cook rapidly while the cream reduces and thickens, until thick enough to coat the spoon.
- Taste and season with salt, if necessary.
- Return the scallops to the pan, stir to coat with sauce and cook for just a minute to reheat. Do not overcook or they will become rubbery.
- Serve immediately with rice and a garden salad.
