How to make it

  • Put the chili, olives, enchilada sauce, cheese, and half the tortilla chips in the slow cooker and stir to combine.
  • Cover and cook on low until bubbly hot and the cheese is melted, 4-5 hours.
  • At the end, stir in remaining tortilla chips and season with hot sauce.

    I made this last night. It's VERY good & went beautifully with the cornbread I served it with. But my family of 4 couldn't eat more than half of it - it makes a ton, and it's REALLY filling. I know the leftovers will all get eaten, but next time I plan to halve the recipe.
