How to make it

  • In a large stockpot, add beef top sirloin, onions, garlic, salt and pepper and cover with water.
  • Bring to boil, then reduce heat and simmer until meat is tender.
  • Once meat is tender, remove from pot and let rest on a cutting board.
  • Once cooled, cut sirloin up into either strips or bite-size chunks.
  • Heat enough vegetable oil to coat bottom of a large skillet.
  • Over medium-high heat, 'fry' the beef and brown slightly. Set aside.
  • Make the salsa verde by adding all ingredient items to a blender and blending until smooth.
  • Warm the corn tortillas in a microwave by covering with a damp paper towel and heating for 30 seconds.
  • To assemble:
  • Take corn tortilla and add meat, salsa verde and garnishments.
  • Squeeze lime juice over everything and eat immediately.
