Tacqueria Style Beef Tacos

- 1 boneless beef top sirloin, cut into big chunks shopping list
- 1 small onion, quartered shopping list
- 5 cloves of garlic, slightly smashed shopping list
- salt and pepper shopping list
- vegetable oil shopping list
- For salsa verde: shopping list
- 2 cups tomatillos, husked and quartered shopping list
- 1 small onion, quartered shopping list
- 4 cloves of garlic, peeled shopping list
- 1 jalapeno, roughly chopped shopping list
- juice of 3 limes shopping list
- 1 cup of chopped cilantro shopping list
- salt shopping list
- corn tortillas (homemade if you have the time) shopping list
- For garnish: shopping list
- chopped onions shopping list
- chopped cilantro shopping list
- sliced radishes shopping list
- limes shopping list
How to make it
- In a large stockpot, add beef top sirloin, onions, garlic, salt and pepper and cover with water.
- Bring to boil, then reduce heat and simmer until meat is tender.
- Once meat is tender, remove from pot and let rest on a cutting board.
- Once cooled, cut sirloin up into either strips or bite-size chunks.
- Heat enough vegetable oil to coat bottom of a large skillet.
- Over medium-high heat, 'fry' the beef and brown slightly. Set aside.
- Make the salsa verde by adding all ingredient items to a blender and blending until smooth.
- Warm the corn tortillas in a microwave by covering with a damp paper towel and heating for 30 seconds.
- To assemble:
- Take corn tortilla and add meat, salsa verde and garnishments.
- Squeeze lime juice over everything and eat immediately.
