Cold Mustard Potato Salad Recipe

A picnic classic. Or a family gathering classic. Or a holiday favorite. Or.... You can adjust any of the ingredients to taste. This is a personal choice. If you use red potatoes you can scrub them and leave the skin on them.

Ingredients
- 4 pounds white potato, scubbed
- 2 stalks celery, chopped
- 1/2 medium onion, chopped
- 5 medium gherkins, chopped
- 2 large eggs, hard-boiled, chopped
- 1 cup mayonnaise
- 2 tablespoons mustard
- 1/2 tablespoon garlic powder
Directions
- Place potatoes in a large saucepan. Boil on high heat until tender. Remove and peel if necessary.
- Put potatoes in a very large bowl. Add other ingredients and mix gently. Let rest in the fridge for several hours before serving.

This is similar to my potato salad. My thinking is that if mustard is good, more will be even better! I like a sharp taste, which the vinegar in the pickle juice or mustard puts in.

I didn't find a basic potato salad recipe out there. There is no one good recipe, there are thousands. Point is that the beginners don't have a direction. I am starting to become the professor... LOL. Gonna form a group for basic needs... the stuff we cook over and over but never winds up in a cookbook. :)

Really close to mine, i just make the dressing separate, put mayo, mustard,garlic in a jar and add pickle juice and pepper and shake. good basic potato salad.

Man if I could hug you right now....!! You just don't know how LONG I have looked for a good go-to potato salad recipe that I could always count on to be delicious. Ok, well because I am apparently an idiot, I messed up and gave it a two!! I'm so sorry, and don't know how to fix it. Anyway, in reality, it's like a 10. Thanks again.
