Tomatoey Meatloaf

- Meat Mixture: shopping list
- 1-1/2 lb. ground beef shopping list
- 1/2 cup sour cream shopping list
- 3/4 cup instant rice shopping list
- 2 eggs shopping list
- seasoning: shopping list
- 2 tsp garlic powder shopping list
- salt & pepper to taste shopping list
- paprika shopping list
- 1 tsp Sazon seasoning shopping list
- 1 tsp onion powder shopping list
- bread crumbs shopping list
- Soup Mixture: shopping list
- 1 box of tomatoe Herb Soup (think it was Progresso-but in carton not can) shopping list
- 1/2 cup sour cream shopping list
- 1/4 cup half-n-half shopping list
- 1/4 cup Parmeasan cheese shopping list
- salt & pepper shopping list
- 2 cans sliced mushrooms drained shopping list
- 1 large onion sliced shopping list
- 16 oz. pasta of Choice shopping list
- 2 tsp italian seasoning shopping list
- salt & pepper to taste shopping list
How to make it
- In large bowl, mix all meat mixture ingredients together, bread crumbs start with about 3/4 cup and add a little more, but not too much, you want it moist.
- In another bowl, mix all soup ingredients together till blended well.
- In 9 x 13 baking dish, shape meat into a loaf.
- Place onion and mushrooms (and any other veggie you might like) over meat
- Pour soup mixture over all and make sure it covers the veggies, too.
- Sprinkle top with salt, pepper and Italian Seasonings.
- If you like top with more cheese or even mozzerella to melt.
- Cook pasta and drain.
- Serve with meatloaf.
- My husband even liked it the next day for sandwiches!!
