Yorkshire Pan  Pudding Recipe
Similar to popovers, this makes a good accompaniment to roast beef or even lamb ( I've even added some rosemary and powdered garlic to the batter

Ingredients
  • 2 Tbs. oil ( corn or even light olive oil )
  • 2 eggs, room temperature
  • 1 cup milk ( skim is fine )
  • 1 cup flour
  • 1 tsp salt
  • dash pepper

Directions
  1. )
  2. Place the fat in a 9 inch square pan.
  3. In bowl beat eggs, milk, flour, salt and pepper until smooth and blended.
  4. Place oiled pan in 425F oven for several minutes.
  5. Remove hot pan and carefully place in batter.
  6. Return to oven and bake 25 to 30 minutes or golden.
  7. Cut into squares and serve at once.
  8. Note: Yorkshire pudding is Traditionally served with roast beef.
