Strawberry Meringue Torte

- 1 1/3 cups sifter cake flour shopping list
- 1 1/4 tsp baking powder shopping list
- 1/4 tsp salt shopping list
- 1/2 cup vegetable shortening shopping list
- 1 1/4 cups sugar shopping list
- 4 eggs, separated shopping list
- 1 tsp almond extract shopping list
- 1/3 cup milk shopping list
- 1/2 cup sliced blanched almonds shopping list
- 2 Tbsp sugar 1/2 cup currant jelly shopping list
- 3 pints strawberries, washed and hulled shopping list
- 1 Tbsp water shopping list
How to make it
- Strawberry filling:
- Crush 1 pint of the strawberries; let stand with 1/4 cup fo sugar for 1 hour.
- Add 1 Tbsp cornstarch. Cook, stirring, until thick. Cool.
- Sift flour, baking powder and salt onto wax paper.
- Beat shortening, 1/2 cup of the sugar, egg yolks and almond extract until fluffy.
- Stir in flour mixture alternately with milk; spread batter into two greased and floured 9-inch pie plates.
- Beat egg whites until foamy. Gradually beat in sugar until meringue is stiff; spread over batter.
- Sprinkle with almonds and the 2 Tbsp of sugar.
- Bake at 350 degrees for 30 minutes. Cool on wire racks.
- Spread strawberry filling over one layer; top with second layer.
- Melt jelly with water; cool.
- Dip strawberries in jelly; arrange on torte. Refrigerate.
