COCOA-PECAN MACAROONS

- Ingredients: shopping list
- 4-oz pecan halves shopping list
- 3 egg whites shopping list
- ¼ tsp. cream of tartar shopping list
- ½ cup sugar shopping list
- ½ tsp. almond extract shopping list
- 2 Tbs. unsweetened cocoa powder shopping list
How to make it
- 1)Preheat oven to 350
- 2)Place pecans in an 8” square baking pan; toast 10-12 minutes, until golden. Transfer pecans to food processor; process until ground.
- 3)Reduce oven temperature to 250. Spray 2 large baking sheets with non-stick cooking spray.
- 4)In a small bowl, with an electric mixer on high speed, beat egg whites and cream of tartar until foamy. Gradually add sugar and almond extract and beat until stiff peaks form. Gently fold in cocoa and ground pecans.
- 5)Drop mixture by heaping teaspoons onto prepared baking sheets, making 32 macaroons. Bake 10-12 minutes, until set around edges. Cool completely on rack. Store in a airtight container.
