Spaghetti With Eggplant And Zucchini

- I package thin spaghetti shopping list
- 2 eggplants shopping list
- 2 zucchini shopping list
- 2 tomatoes shopping list
- 1 onion shopping list
- 1 red pepper shopping list
- grated parmesan cheese shopping list
- 3 cloves garlic shopping list
- black pepper shopping list
- oil shopping list
- salt shopping list
- bay leaf shopping list
- chicken broth shopping list
How to make it
- Directions:
- In a saucepan bring broth to boil with salt and a bay leaf. When starting to boil rapidly add the spaghetti and boil about 10 minutes (follow package directions depending on the type of pasta). Remove and drain the spaghetti. Remove bay leaf.
- In a skillet with olive oil cook on low heat all the vegetables: onion, eggplant, zucchini, peppers, tomatoes and garlic. All prepared before (washed, peeled and cut into small pieces). When all vegetables are tender, season them with salt and pepper.
- In large bowl greased with a little olive oil, add the pasta and mix with cooked vegetables.
- Add the Parmesan cheese on top.
- suggestion: For those who absolutely MUST have sauce with pasta, a good idea is to heat a tomato sauce with oregano in a bowl separately and add to your taste, serve with garlic bread.

Eggplant has the "mouth-feel" of meat, kind of like mushrooms do. I slice and roast the eggplant slices and keep in a baggie ready-to-go.
