How to make it

  • Peel and coarsely grate the potatoes.
  • I like to drain my grated potatoes.
  • Mix potatoes and onion with the beaten egg. flour, garlic powder and salt.
  • Drop teaspoon size pancakes into HOT vegetable oil.
  • Brown on both sides.
  • Serve with sour cream and applesauce.
  • Makes approximately 20-25 small latkes.

    I've made these twice now. The first time they were a bit too starchy tasting for me, so the second time I shredded the potatoes then soaked them in very cold water for 10 min., drained, then soaked again in fresh cold water for another 10 min. Drained them well then dried them, pressing them in a clean tea towel. OUTSTANDING!!! These will be a regular side-dish for me!
